La sequenza "Flos Carmeli" è già presente, in forma incompleta nella prima Messa solenne alla Madonna del Carmine, precisamente nel messale di Londra scritto tra il 1387 e il 1393. Riassume i punti fondamentali della devozione mariana del Carmelo: Maria, fiore del Carmelo, viene chiamata Vergine e Madre singolare, e a Lei, Stella del mare (ricordiamo che il monte Carmelo, in Palestina si protende sul mare ) i Carmelitani chiedono guida e soccorso nella tempeste della vita.
Flos Carmeli è la più antica sequenza in onore della Madonna del Carmine. E’ attribuita allo stesso S. Simone Stok, colui che, secondo la tradizione, ricevette in dono lo Scapolare nel 1251.
